Potato, Leek and Kale Bake (Quajado) Recipe

Step 1
Preheat oven to 350°; brush 13 x 9-inch baking dish with 2 tablespoons oil.
Step 2
In large skillet, heat remaining 2 tablespoons oil and crushed red pepper 1 minute over medium-high heat. Add leeks and garlic powder; cook 3 minutes or until slightly softened, stirring frequently. Add kale and cook 4 minutes or until wilted, stirring frequently. Remove from heat; cool slightly.
Step 3
In large bowl, whisk eggs; add potatoes, feta cheese, ½ cup Parmesan cheese, salt and black pepper. Fold in leek mixture; spread in prepared dish and sprinkle with remaining ½ cup Parmesan cheese. Bake 45 minutes or until golden brown; cut into 12 pieces.
