Bacon, cheddar & jalapeño cornbread stuffing muffins recipe

Step 1
Preheat oven to 350°; line standard 12-cup muffin pan with baking cups and spray with cooking spray.
Step 2
Prepare stuffing mix with stock (instead of water) and butter as label directs.
Step 3
In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; with slotted spoon, transfer to paper towel-lined plate.
Step 4
In large bowl, gently toss jalapeño, cheese, bacon and stuffing; gently press into prepared cups and bake 20 minutes or until tops are lightly browned and cheese melts. Remove from oven; sprinkle with chives.
